Quinoa Pilaf

Ingredients

  • 1 tablespoon vegetable oil
  • 1/2 cup chopped onion
  • 2 carrots, chopped
  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth
  • 3/4 cup chopped walnuts
  • 1/4 cup chopped fresh parsley

Directions

  1. Heat oil in a saucepan over medium-high heat. Cook onion in oil for 5 minutes, or until translucent. Add carrot, and cook 3 minutes more. Stir in quinoa and vegetable broth, and bring to a boil. Reduce to a simmer, cover, and cook 15 to 20 minutes, or until quinoa is tender and fluffy.
  2. In a bowl, toss quinoa together with walnuts and parsley. 
  3. Serve* to your busy little bee.


*I like to serve it with broiled or grilled salmon filets, marinated in equal parts orange juice, soy sauce, and maple syrup.

alright, I'll give Quinoa another try. Love the presentation, I thought I was at some cooking site. I don't have a cute little busy bee, I'll serve mine to a cranky old Bear :-)
